Mash the potato when cooled and mix with sugar until it reaches a dough like consistency, this will take a lot of sugar. Next roll it out on a sugared surface like dough. Spread peanut butter over the top then roll it up like a jelly roll. Refrigerate for a few hours then slice and enjoy.
